Sun Roots

Sunchokes have tons of great names. The first people of USA called them sun root. The French think of them as the best root vegetable for soups (2002 Nice Festival For The Heritage Of The French Cuisine), and every year we get excited for this root crop harvest in early fall. I have written previously about the interesting tuber -- which is a native sunflower (Helianthus tub.) that has been cultivated here in the United States for hundreds of years.
