ESCAROLE & WHITE BEAN SOUP
INGREDIENTS
1 head escarole, chopped
1 can white beans, drained and rinsed
4 cups vegetable or chicken broth
1 onion, diced
2 cloves garlic, minced
1 tbsp olive oil½
tsp red pepper flakes (optional)
Salt & pepper to taste
Grated parmesan (for serving)
INSTRUCTIONS
Heat olive oil in a pot over medium heat. Sauté onion and garlic until fragrant. Add broth, white beans, and red pepper flakes. Bring to a simmer. Stir in escarole and cook for about 5 minutes, until wilted. Season with salt and pepper. Serve hot, topped with grated parmesan.
TIP
Add cooked sausage or pancetta for a heartier version!
