PURPLE DAIKON & SESAME SALAD
INGREDIENTS
2 purple daikons, thinly sliced
1 carrot, thinly sliced
1 tablespoon sesame oil
2 tablespoons rice vinegar
1 teaspoon soy sauce
1 teaspoon honey
1 tablespoon sesame seeds
Optional: 1 scallion, thinly sliced
INSTRUCTIONS
In a small bowl, whisk together sesame oil, rice vinegar, soy sauce, and honey to make the dressing.
Arrange the sliced purple daikon and carrots in a bowl.
Drizzle the dressing over the daikon slices.
Sprinkle with sesame seeds and scallions for garnish.
Serve immediately as a light, refreshing side dish.

For extra crunch, toss in a handful of chopped nuts or toasted pumpkin seeds.
