PURPLE DAIKON & SESAME SALAD

INGREDIENTS

  • 2 purple daikons, thinly sliced

  • 1 carrot, thinly sliced

  • 1 tablespoon sesame oil

  • 2 tablespoons rice vinegar

  • 1 teaspoon soy sauce

  • 1 teaspoon honey

  • 1 tablespoon sesame seeds

  • Optional: 1 scallion, thinly sliced

INSTRUCTIONS

  1. In a small bowl, whisk together sesame oil, rice vinegar, soy sauce, and honey to make the dressing.

  2. Arrange the sliced purple daikon and carrots in a bowl.

  3. Drizzle the dressing over the daikon slices.

  4. Sprinkle with sesame seeds and scallions for garnish.

  5. Serve immediately as a light, refreshing side dish.

For extra crunch, toss in a handful of chopped nuts or toasted pumpkin seeds.
