GOLDEN RAINBOW CARROT SOUP

INGREDIENTS

  • 1 tbsp olive oil

  • 1 medium onion, diced

  • 3 cups rainbow carrots, sliced

  • 1 tsp fresh turmeric, grated

  • 1 clove garlic, minced

  • 4 cups vegetable stock

  • 1/2 cup coconut milk

  • Salt and pepper to taste

INSTRUCTIONS

  1. Heat olive oil in a large pot over medium heat. Sauté onion until translucent.

  2. Add rainbow carrots, turmeric, and garlic, cooking for 2-3 minutes.

  3. Pour in vegetable stock and bring to a boil. Reduce heat and simmer until carrots are tender, about 15 minutes.

  4. Blend soup until smooth using an immersion blender. Stir in coconut milk and season with salt and pepper.

  5. Serve hot, garnished with a drizzle of coconut milk or fresh herbs.
