CHICKPEA SALAD WITH CELERY
INGREDIENTS
1 can (15 oz) chickpeas, drained and mashed
2 celery stalks, finely diced
2 tbsp red onion, finely chopped
¼ cup mayonnaise (or Greek yogurt for a lighter option)
1 tbsp Dijon mustard
1 tbsp lemon juice
½ tsp salt
¼ tsp black pepper
1 tbsp fresh dill (optional)
INSTRUCTIONS
In a bowl, mash the chickpeas with a fork until slightly chunky.
Add celery, red onion, mayonnaise, mustard, lemon juice, salt, and pepper. Stir to combine.
Mix in fresh dill for extra flavor.
Serve on toast, in a wrap, or over little gem lettuce for a fresh salad.
Enjoy immediately or refrigerate for later!
TIP
For extra crunch, add chopped nuts or sunflower seeds!
