CHICKPEA SALAD WITH CELERY

INGREDIENTS

  • 1 can (15 oz) chickpeas, drained and mashed

  • 2 celery stalks, finely diced

  • 2 tbsp red onion, finely chopped

  • ¼ cup mayonnaise (or Greek yogurt for a lighter option)

  • 1 tbsp Dijon mustard

  • 1 tbsp lemon juice

  • ½ tsp salt

  • ¼ tsp black pepper

  • 1 tbsp fresh dill (optional)

INSTRUCTIONS

  1. In a bowl, mash the chickpeas with a fork until slightly chunky.

  2. Add celery, red onion, mayonnaise, mustard, lemon juice, salt, and pepper. Stir to combine.

  3. Mix in fresh dill for extra flavor.

  4. Serve on toast, in a wrap, or over little gem lettuce for a fresh salad.

  5. Enjoy immediately or refrigerate for later!

TIP
For extra crunch, add chopped nuts or sunflower seeds!
